Penne with Prosciutto

1/2 lb penne pasta
1 Tbl butter
1 cup sliced mushrooms
3 oz. proscuitto or 3/4 cup cut up
1/4 cup pine nuts
1 tsp garlic, chopped
1/4 cup brandy
2 cups heavy cream
3/4 cup parmesan cheese
1/3 cup chopped fresh parsley
  • Cook pasta in boiling water for 4 minutes. Drain.
  • In a large sauté pan, melt butter over medium heat.
  • Add proscuitto and mushrooms. Cook 2 minutes.
  • Add pinenuts and garlic. Cook 2 minutes or less, until garlic is fragrant.
  • Add brandy, remove from heat and ignite.
  • Return to heat and shake pan until flame is extinguished.
  • Add cream and stir until it just begins to boil.
  • Add pasta and simmer until pasta is cooked. (About 5 minutes.)
