Plum Frittata with Bacon & Blue Cheese



You may think it an odd combination, but I assure you, it's delicious! Think pancakes with jam & bacon -- but not nearly so heavy. A nice savory fruit dish.

8 Italian Prune plums, halved, pits removed each half cut into quarters
2 strips bacon
1 minced green onion
1 tsp fresh minced sage leaves (approx. 2 leaves)
1 oz. good quality blue cheese
4 eggs beaten with 2-3 tablespoons water
Fresh ground black pepper or a bit of grated nutmeg or both
  • Preheat oven to 350º
  • Combine eggs, pepper, green onion, sage and cheese in a mixing bowl
  • In an oven-safe skillet, slowly render bacon over medium-low heat until slices are very crisp
  • Remove bacon to paper towels to drain and pour off all but 1 tbl fat - reserve remaining fat
  • Increase heat to medium and add plums - cook about 1-2 minutes until slightly softened
  • Add another tablespoon fat to pan
  • Turn off heat and pour egg mixture over plums - stir gently
  • Chop bacon into bite sized pieces and distribute evenly
  • Place into oven for about 15 minutes until just a bit jiggly in the middle
  • Cool slightly before serving
