Plum Tomatoes with Garlic Oil & Thyme Recipe
Total time for this recipe is 30 minutes or
less.
1 dozen fresh, organic plum tomatoes, cut lengthwise in half
Garlic Oil (Recipe follows)
Fresh thyme leaves to taste
Kosher or Sea Salt
Fresh ground black pepper
Garlic Oil
4 tbl olive oil
2 cloves garlic, whacked with the side of a chefs knife to
split the skins and flesh
Pinch crushed red pepper flakes (optional)
Garlic Oil
- Combine olive oil, garlic cloves and pepper flakes in a
saucepan
- Heat over low for 15-20 minutes until garlic is browned
and oil is aromatic - Do not let garlic burn!
Tomatoes
- On a decorative platter or large plate, lay tomato halves,
cut side up
- Drizzle with garlic oil to taste
- Sprinkle with thyme leaves, salt & pepper and serve
