Peanut Butter Cup Cookies

2 cups flour
1 tsp baking powder
1/4 tsp salt
1 cup butter softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1 bag miniature peanut butter cups (safeway brand)

combine dry ingredients, set aside
beat butter & sugar until creamy, add egg
mix into dry mixture
roll dough into small balls
place in mini muffin tins
add a peanut butter cup to the center of each ball
bake for 7 - 9 minutes
makes 2 dozen
