Quick Vanilla Pudding

I absolutely love vanilla custards. This is a quick one or two person serving for after dinner. Very satisfying. If I'm being good, I use soy milk and less sugar - the texture is slightly more grainy than with cows milk, but still delicious.

1 large egg
3/4 cup milk
1 - 2 tbl sugar
1/2 tsp vanilla extract or 1/4 vanilla bean split and scraped
  • In a heavy saucepan, whisk together egg, milk and sugar (and vanilla bean if using)
  • Over low heat, stirring constantly, cook pudding until thickened
  • Remove from heat and stir in vanilla extract (or pour through strainer to remove vanilla bean)
  • Cool slightly and serve (I like this warm)
