Quick Soaking Beans

Dried Beans
  • Rinse and drain beans until drained liquid is clear.
  • Add beans and water to cover by at least 2 inches to a large pot.
  • Heat to boiling and boil for 2 minutes. Turn off heat.
  • Let stand for 1 - 4 hours.
  • Discard soaking water and rinse beans.
  • Proceed with desired recipe, using fresh water or broth.

    Alternate method: Modify the above from "let stand from 1 - 4 hours" to "allow to cool completely". I've never tried this method - from Michael Ciarello (Napa Style) formerly of La Trevigne in Napa.
