Quick Spaghetti for One

Quick - 30 minutes or less Total time for this recipe is 30 minutes or less.

This is one of my favorite lunches. It's fast and very warming on a cool day. To tell how much a single serving of dried pasta is, read the total number of servings in the package and eyeball the amount to make one serving. (If it says 7 servings, use about 1/7th of the package.)

One serving dried spaghetti, whole grain or whole wheat
1 tbl tomato paste (no sugar added)
1 small garlic clove, grated
pinch crushed red pepper flakes
Olive oil
  • Heat water for pasta
  • When boiling, add 1 1/2 tsp kosher salt and pasta
  • Cook 5 minutes, reserve about 1/4 cup cooking water, drain pasta and set aside
  • In pasta pot, heat olive oil over medium low heat
  • Add tomato paste, garlic and pepper flakes
  • Stir to combine well and cook for 3-4 minutes until tomato paste is very sweetly fragrant
  • Add 1/4 cup pasta cooking water and stir until smooth
  • Add pasta and reduce heat to low
  • Stir to coat pasta well and turn off heat
  • Let stand about 2 minutes, then.....dive in!
