Red Quinoa with Peas



You can use any quinoa in this recipe. Serves 2.

1/2 cup red or other quinoa
1 large shallot, minced
1 clove garlic, minced
1 tsp salt
1 cup vegetable or chicken broth
1 tsp mixed dried herb such as herbs de provence or italian seasoning
1 tsp fresh sage or 1 tbl parsley or basil
1 cup frozen green peas, thawed
  • Sauté shallot in olive oil until just beginning to brown
  • Add garlic, salt, dried herb and quinoa and sauté until quinoa is toasted and sizzles (about 2-5 minutes)
  • Add broth and fresh herb, reduce heat to low, cover and cook 20-25 minutes, until quinoa is tender
  • Add green peas, cover and turn off heat
  • Let rest for 5 - 10 minutes for peas to heat through
  • Stir and serve
