Roasted Asparagus

I love asparagus any way it's prepared, but my three favorite variations all have one thing in common - intense, sweet asparagus flavor. Steaming just doesn't do that. You can achieve this result by grilling or sauteeing, but this one is really easiest and most fool-proof. Use large asparagus for this.

Asparagus spears, washed, dried and 1 inch trimmed off ends
Olive Oil
Salt & Pepper
  • Preheat oven to 400º
  • Spread asparagus spears on a baking sheet and drizzle with olive oil
  • Rub oil all over asparagus, making sure to cover tips well
  • Spread out to a single layer and sprinkle with salt & pepper
  • Roast until lightly browned, turning once to brown both sides

    This will be more tender than you're accustomed to, but the flavor is too good to miss. This can be served warm or cold and is excellent with the Fresh Mint Pesto drizzled over the top.
