Roasted Peaches

We have a peach tree that produces more than you can imagine. This is a great way to preserve peaches, but also just wonderful as a dessert.

4 firm ripe peaches
1-2 tbl sugar
1 tbl Margarine or Butter
White Wine or Brandy
Fresh Raspberries or Vanilla Ice Cream
  • Preheat oven to 400
  • Peel peaches, cut in half and remove pits
  • Toss in a bowl with sugar
  • Butter the bottom of a baking dish just large enough to hold the peaches in a single layer
  • Place peaches cut side down in dish and sprinkle with white wine or brandy
  • Roast for 5 minutes and check for doneness (you don't want them to become mush)
  • Turn and roast an additional 5 minutes or until done
  • Remove from pan and serve warm with fresh raspberries or Vanilla Ice Cream
