Salmon Casserole

Contributed by: Melinda

Use your favorite Tuna Casserole recipe and substitute an equal amount of Trader Joes canned Red Salmon or use the recipe below. This is also perfect for leftover salmon.

1 can Trader Joe's Red Salmon
1/2 lb bowtie pasta
16 oz. hot vegetable broth
2 tbl soybean margarine or butter
2 tbl flour
Salt & Pepper
Fresh herb (optional)
  • Cook pasta in boiling water until just barely done.
  • In a sauce pan, melt margarine over medium heat.
  • When margarine foams, add flour and stir until very well blended.
  • Add a small amount of broth and whisk until no lumps remain.
  • Continue adding broth and whisking briskly to keep from lumping, until all broth is incorporated.
  • Heat sauce until it is thickened and season with salt & pepper.
  • Remove salmon from can. Gently peel off skin and remove any hard bones. (Most of the bones in canned salmon are very gelatinous and don't need to be removed.)
  • In a large bowl, incorporate salmon into pasta. Add fresh herb if using.
  • Pour sauce over pasta and mix well.
  • Pour into a greased baking dish, cover and place into a 350 oven for approximately 35 minutes.

The bright red salmon makes this a much lovlier dish than plain old tuna casserole, and the flavor is more vibrant. Alternatively, you could use leftover salmon for this very successfully.

I generally avoid dairy products and have developed this version of vegetable gravy to replace canned soups in dishes I enjoy. You can use canned soup in place of the vegetable broth, margarine and flour. You can also add chopped celery and onion for additional flavor and crunchiness. The addition of a can of green peas is also a very nice variation.
