Salmon Salad
This is terrific with leftover salmon. It can be used on a snack/appetizer table too.
Leftover, cooked salmon*
Stuffed green olives, chopped (garlic stuffed are a nice touch)
Thinly sliced red onion
Lemon juice
Mayonnaise (only enough to moisten)
Kosher salt
Fresh black pepper
Cucumber slices (or crackers, thinly sliced dark bread, etc.)
- For cucumber slices; wash well and remove ends. Cut into 1/4 inch slices on a slight diagonal. Lay out flat and sprinkle very lightly with kosher salt. Place salted side down onto paper towels while preparing the salmon.
- In a mixing bowl combine salmon, green olives, red onion, a pinch of kosher salt and mayo - mix gently so as not to break up salmon pieces too much
- Squeeze a little lemon over the salmon salad
- Turn cucumber slices over - do not rinse
- Place a spoonful of salmon onto each cucumber slice and place onto a platter
- Squeeze a bit more lemon over all and a few grinds of black pepper
*If you don't have leftover salmon, you can easily grill or poach some for the recipe.
