Scottish Shortbread

Scots use powdered - granulated will taste a little different - good with either powdered or granulated

2 cubes butter (Do not use margarine)
2 1/2 cup flour
1/2 cup powdered sugar or 1/2 cup granulated sugar
1 teas vanilla
  • Combine flour and sugar together.
  • Cut in butter until mixture resembles fine crumbs.
  • Form mixture into a ball and knead until smooth.
  • Press into square baking dish, 8x8inches.
  • With fingers press until edges form a crust (lip) on edge and then press with the tines of a ford making a lined crust.
  • Bake at 325 degrees for 30 min.Until crust is browned a golden brown.
  • Cool and cut into squares Or rectangles.
