Seafood Salad
A very nice main dish. Of course, you could substitute or add any ingredients you like.
1 lb. cooked shrimp (small or medium are ideal)
Greens of choice (I like romaine, but anything is good)
1 grated carrot
1 rib celery, finely diced
1 shallot or 2 green onions, minced
5-6 radishes, halved and sliced
1 avocado, diced
Lemon or other cucumber
Fresh garden tomatoes if in season (otherwise skip it)
Juice of half a lemon or lime
1 recipe Creamy Italian dressing
- Combine greens and other veggies
- Dress with a bit of dressing
- Mix shrimp with the lemon or lime juice and top the salad
- Serve additional dressing on the side
