Grilled Shish Kabob

This will serve about 4 people.

2 lb lamb stew meat, or 1 lamb sirloin cut into cubes
1 red bell pepper cut into 1 inch pieces
1 onion, cut in quarters, each quarter cut in half crosswise
Olive Oil
Fresh mint, minced
Lemon Juice
Ground Allspice
Salt & Pepper
  • Combine lamb pieces, pepper and onion pieces in a mixing bowl
  • Drizzle with olive oil to coat and add mint, lemon juice, allspice, salt & pepper and allow to marinate about 1 hour at room temperature, or 2 or more hours in the refrigerator
  • Prepare hot coals
  • Remove lamb from marinade and place on skewers, adding a couple pieces of pepper and onion per skewer
  • Place directly over hot coals, turning to char all over the lamb
  • When charred, check for doneness - if not cooked to your liking, move to the side of the grill and cover
  • Check every few minutes until done
  • Remove to a platter and allow to cool slightly
  • Remove meat and vegetables from skewers

    This is excellent served with a salad of tomatoes and cucumbers with lemon viniagrette
