Peas with Shallot & Mint
A traditional combination of flavors.
3 cups fresh english peas
1 large shallot, minced
1/4 cup fresh mint, minced
Kosher salt & fresh pepper
Olive oil
- Cook peas in boiling water for about 3-4 minutes
- While peas cook, heat oil in a skillet and sauté shallot until
translucent over medium heat
- Add peas when cooked and continue cooking for about 1-2 minutes
- Remove from heat and place in a warm serving dish
- Mix in mint and add salt & pepper to taste
