Simple Marinara Sauce

I love Muir Glen canned tomato products so I generally have some of everything on hand. I use mostly whole, peeled tomatoes and tomato paste.
One 28 oz. can whole peeled plum tomatoes or 2/3 can tomato paste blended with 1 1/2 cups mild chicken broth
1 large clove garlic, grated
1 anchovy fillet, minced (optional)
1/2 tsp red chili flakes
1 tsp dried basil leaf, ground
Olive Oil
Ground black pepper
Kosher salt to taste
- Heat olive oil in a skillet over medium heat
- Add anchovy and red chili flakes - cook until anchovy has dissolved into the oil
With Tomato Paste
- Add tomato paste and stir and cook until oil has taken on a deep red color
- Add chicken broth and blend to incorporate broth and paste well
- Add grated garlic, basil, black pepper and no more than 1/2 tsp salt
- Simmer for 10 minutes for flavors to blend
- Taste and adjust seasonings
With Whole Tomatoes
- Add tomatoes breaking up with a spoon and cook for approximately 20 minutes to reduce liquid and break down tomato pieces
- Add garlic, basil, black pepper and salt
- Simmer for 10 minutes for flavors to blend
- Taste and adjust seasonings
Serve over home made ravioli, mixed with pasta or as a sauce with red meat.
