Smoked Tomatoes

Serve one tomato per person. This is a delicious side-dish and can be experimented with.

4 medium fleshy home grown or organic tomatoes
Fresh basil leaves
Blue Cheese or combination of blue and other medium-soft cheeses
  • Cut the top 1/3 inch off the tomato
  • Using a teaspoon, carefully remove the inside of the tomato, leaving about 1/2 inch of flesh
  • Sprinkle salt & pepper inside each tomato
  • Line the inside of the tomatoes with basil leaves
  • Fill the tomatoes with cheese
  • Place at the edge of the grill or smoker until cheese is melted and tomato is cooked
