Warm Spice Cake





1/4 cup butter or shortening (can use soy margarine)
3/4 cup sugar
1/2 tsp vanilla
2 eggs, beaten
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp cloves
1/2 cup milk (can use soy milk)
1/4 cup butter (can use soy milk)
1 cup brown sugar
2 tbl milk
1 cup flaked coconut
  • Cream butter and add sugar gradually
  • Add vanilla, beat in eggs one at a time
  • Combine dry ingredients and add alternately with milk
  • Pour into a greased and floured 8 inch square or 7 x 11 inch pan
  • Bake at 350 for 30-40 minutes
  • Cream butter and brown sugar together
  • Add milk and mix well
  • Stir in coconut
  • Let cake rest 5 minutes and while still warm, spread frosting evenly over top
  • Place frosted cake under broiler about 4 inches from heat until golden brown. You may want to shift the cake a couple of times to avoid hot spots.

    Cut and serve warm.
