Spicy Indian Oatmeal

2/3 cup dry oats, regular or instant
2 cups water
1/4 tsp salt
1/4 cup raisins
1 cardamom pod, seeds only (about 3-4 seeds)
1/4 tsp ground cinnamon
1/8 tsp ground ginger
- Put oats, raisins, salt, and water in small saucepan and bring to boil.
- Reduce heat to low and add remaining ingredients.
- Cover and cook over low heat until done. (2-10 minutes depending on type of oats)

Serve with sucanat or honey and soy milk if desired.
- Variation: Steel cut oats are even more delicious and satisfying.
- 1 cup steel cut oats
- 4 cups water
- 1 tsp cinnamon
- 1/2 tsp ground ginger or use some fresh ginger if you like a bit of heat
- Seeds from 3 cardamom pods
- 1/2 tsp kosher salt
- 1/2 cup dried or fresh fruit
Make a paste with spices and 1 -2 tsp water. Heat 4 cups water to boiling and stir in oats. Cook over medium heat and low boil until oats begin to become gelatinous. Add spice paste and reduce heat to simmer. Cover and cook approximately 20 minutes, stirring frequently to prevent sticking. The oats should still have texture and not be soft. When finished, they will have absorbed most of the liquid. Turn off heat, uncover and allow to stand 5 - 10 minutes. Serve as above, or with agave syrup, stevia powder, etc.
