Spinach Cheese Pasta

8 oz. egg noodles (or other leftovers)
1 Tbl. oil
1 large clove garlic, minced
1 10 oz. pkg. frozen, chopped spinach, thawed & drained
2 tsp. fresh basil, minced (or 1/2 tsp. dry)
1/4 cup fresh parsley, minced (or 1 Tbl dry)
1 cup low-fat cottage cheese (or part-skim ricotta)
1/4 tsp. salt
Freshly ground black pepper
2 Tbl. grated parmesan
- Saute oil, garlic, spinach for 5 minutes.
- Add remaining ingredients, parmesan last.
- Pour mixture over noodles and toss.
Leftover noodles can be reheated by pouring boiling water over them.
