Mary's Spinach Salad

2 packages baby spinach
8 strips bacon, fried crisp, chopped
4 hard-boiled eggs (whites only), chopped
  Dressing
1 cup salad oil
5 tablespoons red wine vinegar
1 1/2 tsp salt
1/2 tsp dry mustard or prepared mustard
2 tsp chopped parsley
2 cloves crushed garlic
4 tablespoons sour cream
Ground Black Pepper
  • Combine dressing ingredients and let stand 6 hours before using
  • Combine spinach, bacon and egg
  • Dress just before serving
