Spinach Salad

1 cup Extra Virgin Olive oil
1/3 - 1/2 cup Balsamic Vinegar
1 tsp Dijon Mustard
1 clove garlic, crushed
Salt and Pepper
1 lb fresh spinach
1 1/2 cups dried cranberries or fresh fruit
1/2 cup crumbled blue cheese
Coarsely chopped pecans
  • Combine oil, vinegar, mustard, garlic, salt and pepper and mix well
  • Place spinach in a large serving dish and sprinkle cranberries and pecans over the top
  • Dress with plenty of dressing

    This is delicious just as written, but if you want to use it for a main meal, you can meat and hard cooked eggs.
