Summer Viniagrette

I think this lighter version of viniagrette is great for summer salads or cold vegetables.

Extra Virgin Olive Oil
Red Wine Vinegar
Garlic, crushed
Sugar
Dijon Mustard or Dry mustard
Freshly ground black pepper
Salt
  • In a jar with a tight fitting lid, pour the desired amount of olive oil
  • Add vinegar to the desired proportion
  • Add garlic, sugar, mustard, salt and pepper
  • Close jar tightly and shake until combined
  • Dress the salad just before serving

    No proportions are given - this is made to taste. If you're not sure how to begin start with 1 cup oil, 1/3 - 1/2 cup vinegar, 1 small clove garlic, 1/4 tsp sugar, 1/4 tsp dry mustard or 1 tsp dijon, salt and pepper. Adjust to your own taste.
