Another Taco Salad

iceberg lettuce, chopped or shredded
1 lb ground turkey or beef, browned
1 tbl chili powder
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
salt & pepper
1/4 lb grated cheese
2-3 corn tortillas, fried crisp and cut into 1 inch pieces
1 can pinto or kidney beans
1/4 cup chopped red onion
1 avacado diced
2 tomatoes diced
1 cucumber diced
1 jar Trader Joes Salsa Autentica*
Sour cream (optional)
- Combine lettuce, beans, red onion, and cucumber in a very large bowl
- Add grated cheese and tortilla pieces and mix well
- Top with ground beef, tomato, and avacado
- Use the salsa as a salad dressing and garnish with optional sour cream
You can add the beef fairly warm, but it does wilt the lettuce quickly.
To season the meat you could also use a packaged taco seasoning mix, but I
don't like to purchase products with preservatives or chemical additives.
Be sure to disperse the cheese well or you'll have a lump of melting cheese
in one spot. Trader Joes Salsa Autentica comes in medium hot and has a nice bite. It is a perfect taco salad dressing if you aren't shy of heat.
If you prefer something sweet, try the Sweet & Sour Dressing ala Pueblo del Sol.
