Tomato & Avocado Crackers
Ok, this is too easy for words and yet, or perhaps so has become a
standard lunch dish for Frank & I. Now that we can buy tomatoes at the
farmers that actually smell like tomato, we can't be stopped! Just wait
until our tomato plants are producing...
Frank likes
them with pepper only, I like them with salt only. This is enough for us
as a lunch meal.
For 2 people:
1 organic fresh tomato
1 small-medium very ripe avocado
4 Wasa whole grain crackers
Basil Chiffonade (optional)
Kosher Salt
Fresh ground black pepper
- Lay out two crackers each on two lunch plates
- Cut avocado in half and remove pit/seed
- Using a large spoon, carefully remove the flesh from the
skin in one piece
- Place cut side down on a cutting board and slice into very
thin, 1/8 inch thick slices lenghtwise
- Slice tomato into very thin 1/8 inch thick slices
- Place one layer of avocado (1/4 of whole avocado) onto
each cracker
- Place two slices of tomato on top of avocado
- Add basil if desired
- Top with salt & pepper to taste
Do not be tempted to add any condiments. The avocado has
plenty of fat and you'll only dilute the flavor if you add
anything else.
Yumm! A perfect light lunch.
