Tomato Lemon Bread
Total time for this recipe is 30 minutes or
less.
4 fresh plum tomatoes (hothouse in winter)
1 fresh meyer lemon
1 clove garlic, grated
Olive Oil
1 Tbl capers
Black Pepper
Kosher Salt
1 loaf rustic bread
- Chop tomatoes in a very fine dice and place into a shallow bowl
- Mash about 1/2 the tomatoes
- Zest the lemon and add about 1 tsp zest and garlic to the tomatoes
- Mince the capers and add to the tomato mixture
- Add about 1/4-1/3 cup very good olive oil
- Season with salt and black pepper
- Taste to adjust blend
- Use a spoon to spread on bread slices
This is a wonderful appetizer
