Tomatoes al Fresco

This is my favorite summer salad and one of my favorite ways to eat tomatoes, second only to eating them warm from the vine in the heat of the day.

Al Fresco means something done outdoors, and this is an absolutely perfect summer dish especially if enjoyed on the patio or on a picnic.

3-4 fresh large tomatoes from your garden, or buy organic
Garlic flavored Olive Oil
Kosher Salt
Fresh Black Pepper
Fresh Basil
  • Slice the tomatoes into about 1/2 inch thick slices and spread flat on a platter or serving tray
  • Drizzle with olive oil and sprinkle with salt and pepper
  • Tear Basil or cut into julienne strips and sprinkle all over the top of the tomatoes
