Penne Pasta with Tuna Sauce



This is a great lunch recipe and completely acceptable as a one dish meal. Of course, you could add a small salad and / or bread too. Alone this will serve two.

1 6-7oz. can tuna in water
1/3 lb. dried penne pasta
3 green onions, thinly sliced
1 large garlic clove, minced
grated nutmeg
Olive Oil
1 cup heavy cream
1 heaping tbl Besan or Wheat flour
2 cups (or several large handfuls) arugula leaves
1/4 cup minced fresh basil
Salt & Pepper to taste
  • Cook pasta and set aside
  • In a saucepan over medium heat, saute green onion in olive oil until softened
  • Add garlic and saute briefly
  • Sprinkle with besan or wheat flour and cook, whisking until bubbly and lightly colored (about 2-3 minutes)
  • Slowly add heavy cream, whisking to avoid any lumps
  • Stir in tuna breaking up any large pieces
  • Add nutmeg and cook until slightly thickened
  • Add pasta and cook about two minutes
  • Turn off heat add arugula and stir
  • Cover pan and let stand about 3-5 minutes
  • Serve topped with minced basil
