Tuna & Avocado Salad

1 can chunk light tuna in water or oil
1/2 celery stalk, diced very small
1" by 4" strip of red pepper, diced very small
1/4 cup finely minced onion
1/4 cup cucumber diced very small
1 tbl dijon mustard
1 tbl mayonnaise or more to suit your taste
Salt and Pepper to taste
2 avocados, cut in half and pits removed
Chopped parsley
- Drain tuna and flake with a fork
- Add celery, red pepper, onion and cucumber and mix well
- Combine mustard and mayo and mix into tuna mixture
- Add salt and pepper to taste
- Using a dessert spoon, remove avocado halves from their skins and place on a salad plate
- Divide the tuna placing a scoop into each avocado half
- Garnish the plate edges with some chopped parsley
