Turkey Apple Burgers

These are smoke cooked on my Big Green Egg. You can easily adapt the method to a any other smoke cooker. The recipe as is requires low to moderate heat, so they are not suited to grilling over high heat. They can also be done in a skillet more quickly, but you'll miss the smokey flavor.

1 1/4 - 1 1/2 lbs ground turkey - dark and white meat
1 medium granny smith apple - peeled, cored and shredded
1/2 medium onion, grated
1 large garlic clove, grated
1/4 cup pesto sauce or fresh minced basil leaves
Kosher salt & black pepper
6 thin slices prosciutto
  • Soak smoking wood and bring smoke cooker to about 220º to 250º
  • Combine turkey, apple, onion, garlic, pesto, salt & pepper
  • Form into 6 equal patties and wrap each patty with one slice of prosciutto
  • Brush both sides of burgers with olive oil and place onto the smoker grill
  • Smoke for about 30 minutes, then turn
  • Continue smoking until cooked through - another 15-25 minutes
  • Let stand 5-10 minutes before serving
