Curried Turkey & Broccoli

2 eggs
4 cups seasoned mashed potatoes
1 large can 10 1/2 oz Cream of chicken soup
1/2 cup mayonnaise
1 teas lemon juice
1/2 to 1/2 teaspoon curry powder
two cups cut up turkey
1 pkg frozen chopped broccoli
1/3 cup almonds (optional)
  • Heat oven to 350
  • Grease square baking dish 8x8x2 inches.
  • Stir eggs into potatoºs.ð Spread on bottom of dish.
  • Mix soup, mayonnaise, lemon juice and curry powder in med bowl until blended.
  • Stir in turkey and broccoli
  • Spoon onto potato crust
  • Bake 20 min. then sprinkle with almonds Bake 15 more min

    You may bake this without the potato crust and is a good casserole alone.
