Turkey & Spinach Meatloaf
Contributed by: Melinda
I first made this one night when Frank hadn't been feeling well. Food
wasn't agreeing with him and this was a mild combination. It could easily
be jazzed up, but doesn't need anything - the flavors are excellent.
1 package Trader Joe's ground turkey (about 1 1/4 lbs)
1 lb. package frozen, chopped spinach
1 large egg
1 - 2 Tbl Worcestershire Sauce
Salt & Fresh ground black pepper
Olive oil
- Thaw spinach, wrap in tea cloth or dish towel to press out
liquid
- Preheat oven to 350ª
- Combine all ingredients in a large bowl and mix well
- Lightly brush a baking dish with olive oil
- Form meat mixture into an oval loaf and flatten lightly on
top so it is approximately equally thick
- Brush top lightly with olive oil
- Bake for approximately 1 1/4 hours until turkey is well
done
Serve with 1 or 2 small vegetable sides or basmati rice
