Whole Grain Bread with Fructose

Contributed by: Melinda

Use the soymilk for dairy free, low fat and the sweetener is fructose so it is more healthy for diabetic diets. Sugar and fructose are not equal amount substitutions.

1 1/2 cups milk or plain soymilk
1 Tbl Olive Oil
1 tsp Kosher Salt
3 Tbl fructose
2 Tbl poppy seeds (or use Sunflower seeds)
1 Tbl Sesame seeds (or double the Flax seeds)
1 Tbl Flax seeds
1 Tbl Millet
1 Tbl Quinoa
3 1/2 cups whole wheat flour (fresh - stored in freezer)
2 tsp yeast (fresh - stored in refrigerator)
4 Tbl Wheat Gluten
  • Place ingredients in bread maker pan according to instructions for your machine.
  • Set to whole wheat/white bread setting, medium crust.

This recipe is very delicious with a good texture. It should be stored in the refrigerator.

*It is important to always use fresh whole wheat flour. Because the fiber and protein are intact on the grain when it is ground, it will spoil more readily than white flours will.
