Pears Poached in Red Wine

Contributed by: Melinda

Use firm pears for this recipe and a good fruity red wine like Zinfandel is delicious.

4 Bosc Pears or other very firm pears
Juice of 1 lemon in 2 1/4 cups water
Peel of 1 orange
2/3 cup sugar
1/2 to one Bottle Red Wine
1 stick cinnamon
Pinch salt
  • Peel pears leaving the stem on and place in lemon water
  • Remove a pear from the water and very carefully cut in half, directly through the stem if possible (leaving part of the stem on each half
  • Use a teaspoon to remove core and blossom end
  • Place pears into a large pot face down in a single layer
  • Add sugar, orange peel, cinnamon stick, salt and pour wine over
  • When the wine begins to boil, reduce heat and simmer for about 30-40 minutes until tender
  • Carefully remove the pears from the syrup and set aside
  • Return syrup to a boil and reduce by half
  • These can be served chilled, but they're very nice warm - make ahead and warm just before serving
  • Place two warmed pear halves on a dessert plate and spoon warmed syrup over the top

Can be served with ice cream or just as they are
