Zucchini Torte
My neighbor Doris gave me this recipe last year. Her brother also has a
large vegetable garden every, and his wife had given her this
'italian' recipe.
The recipe as she gave it to me calls for Bisquick, but I don't buy things
of that sort. I just modified it for my pantry. I also cut the proportions
in half.
2 cups unpeeled zucchini, grated
3/4 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup grated cheese (Doris uses parmesan)
3 eggs
1/2 onion, chopped
1 clove garlic, minced
1/4 cup oil
1 Tbl parsley, chopped or 1 tsp dried
1 Tbl basil, chopped or 1 tsp dried
1 tsp oregano, chopped, or 1/4 tsp dried
Black pepper
- Preheat oven to 350º
- Combine all ingredients and pour into a greased 8 x 8 inch baking dish
- Bake for 45 minutes
