Avocado Crostini

  • Preheat broiler or toaster oven
  • Slice baguette on a diagonal in about 1/2 inch thick slices
  • Toast slices on both sides until browned but still soft inside
  • Remove from broiler/oven and rub one side of each slice with the peeled garlic clove - set toast aside
  • Peel, remove seed and mash one avocado - add lemon zest and lemon juice
  • Slice grape tomatoes in half and add to mashed avocado
  • Peel and remove seeds from remaining avocados
  • Coarsly chop the flesh
  • Add chopped avocado, grated garlic and herb to the mashed avocado and stir gently
  • Place one or two tablespoons of avocado mixture (depending on toast size) on top of each slice of toast
  • Top with whole thyme or mint chiffonade
