Avocado Crostini

What you need

  1. 1 french baguette loaf
  2. 3 ripe avocados
  3. 1 pint grape tomatoes
  4. 1 small grated garlic clove
  5. 1 large peeled garlic clove
  6. 1 tsp fresh minced thyme or mint leaves
  7. Zest from one lemon
  8. 2 Tbl fresh lemon juice
  9. Fresh whole thyme leaves or fresh mint chiffonade for garnish

How to make it

  1. Preheat broiler or toaster oven
  2. Slice baguette on a diagonal in about 1/2 inch thick slices
  3. Toast slices on both sides until browned but still soft inside
  4. Remove from broiler/oven and rub one side of each slice with the peeled garlic clove - set toast aside
  5. Peel, remove seed and mash one avocado - add lemon zest and lemon juice
  6. Slice grape tomatoes in half and add to mashed avocado
  7. Peel and remove seeds from remaining avocados
  8. Coarsely chop the flesh
  9. Add chopped avocado, grated garlic and herb to the mashed avocado and stir gently
  10. Place one or two tablespoons of avocado mixture (depending on toast size) on top of each slice of toast
  11. Top with whole thyme or mint chiffonade
