I am
pretty committed to only purchasing and eating organic poultry.
However, the price is more substantial than for non-organic
poultry. In the case of chicken, I've started
purchasing organic
whole chickens and cutting them into pieces. This is really pretty easy and
doesn't take much time once you get the hang of it. Whole organic
chickens run anywhere from $2.49/lb. to $3.00/lb. which is very
reasonable when compared with other types of meat protein.
When you do this, you will end up with whole chicken wings which
tend to be less useful unless you're frying (which we never do) or
if you have someone who has a special interest in roasted wings.
What we've started doing is using them for our
Casa Rosa Hot Wings
recipe. I purchase several chickens at one time, so we always have
enough for just us, but you can also just freeze them until you
have enough for a party.
