These terms typically refer to prepared 'bites' served prior to the main courses of a meal. They can also refer to prepared 'bites' served at a cocktail party with aperitifs. The terms are not intended to pertain to un-prepared dishes such as crudité, but for most of us, they are inclusive of anything served buffet style other than main meals.
