Bruschetta Appetizer

1 french baguette or rustic long loaf bread
1-2 large cloves garlic, peeled
Olive Oil
Salt & Pepper
Optional Toppings
2 large peeled, seeded and diced tomatoes
Chopped garlic
5-6 large basil leaves, in thin julienne
Brie, Goat, Bleu or other soft cheese
Roasted Peppers
  • Slice bread into 1/4 - 1/2 inch thick slices (on an angle is nice)
  • Toast on the grill or in oven until lightly brown - they should be crisp on the surface and still soft inside
  • Slice garlic clove in half and rub the surface of one side of each bread slice thoroughly
  • Brush with olive oil and sprinkle with salt and pepper. This is the most common version of italian garlic bread.
  • Add any of the toppings listed above or whatever sounds good to you, drizzled with a little more olive oil if desired.
