Lemon Pea Crostini

What you need

  1. 1 cup fresh english peas
  2. 1 fresh lemon
  3. 1 tsp - 1 tbl honey
  4. 1/4 cup chevre goat cheese
  5. Kosher Salt & Pepper
  6. 12 slices Crostini

How to make it

  1. Boil peas about 4-5 minutes until just cooked
  2. Grate 2 tsp lemon zest, then cut lemon in half and squeeze juice
  3. In a mixing bowl combine cooked peas and goat cheese
  4. Add 2 tsp lemon juice, 1/2 tsp kosher salt and mash together - it doesn't have to be completely homogenized
  5. Add 1 tsp honey, combine well and taste
  6. Add more lemon juice, honey, salt & pepper to taste
  7. Spread mixture on crostini and sprinkle each with a pinch of lemon zest
