Albacore Tartare

Be sure to get very fresh, high quality (often labelled 'sushi grade') fish. You can use ahi too, but albacore is a perfect choice with these flavors. Serves 2 as a starter

What you need

  1. 1/2 lb. fresh albacore as for sushi
  2. 2 scallions, minced
  3. 1 tsp toasted sesame seeds
  4. 1 tbl minced cilantro leaves, or more to taste
  5. 1/4 - 1/3 cup finely diced persian cucumber
  6. grated zest from 1 lime
  7. Juice from 2 limes, plus lime wedges for garnish
  8. 2 tsp soy sauce
  9. 1/4 or more teaspoons kosher salt (to taste)
  10. hot sauce to taste
  11. olive oil to moisten and bind

How to make it

  1. Combine scallions, cilantro, cucumber, lime zest and sesame seeds
  2. Add lime juice, soy sauce and salt
  3. Using a very sharp knife, dice the albacore in approximately 1/4 inch pieces
  4. Add to vegetable mixture and stir to combine
  5. Taste, add salt and hot sauce to taste
  6. Add enough olive oil to bind and combine well
  7. Chill for 30 minutes to 1 hour
  8. Serve with sliced cucumber and lime wedges as a starter

Can also be part of an appetizer table served with crackers. Be sure to keep it chilled.
