Avocado 'Tillas
What you need
- 2 avocados
- 2 cups grape or cherry tomatoes
- 1 large finely minced shallot
- 2 tsp mayonnaise
- 1 lime or meyer lemon
- 1/4 cup minced cilantro leaves
- Kosher salt to taste
- Large (2-3 inch) tortilla chips*
How to make it
- *The chips for this recipe can be purchased or you can make
them from corn tortillas cut into quarters. Brush with olive oil and
bake until crisp.
- Cut avocados in half, remove seeds and scoop out flesh with a
large spoon. Mash half of one of the avocados.
- Dice the remaining
three halves and add to the mashed avocado.
- Zest the lime or lemon and add to the avocado
- Add juice of the lime or lemon to keep the avocado from
browning
- Cut grape tomatoes into quarters and add to the avocado
- Add mayonnaise, shallots and half the cilantro
- Stir to combine well
- Taste and add salt as needed
- Place a tablespoon or so of the avocado on each tortilla chip
and place on a serving tray
- Sprinkle remaining cilantro over the top
