Tomato Lemon Bread

What you need

  1. 4 fresh plum tomatoes (hothouse in winter)
  2. 1 fresh home grown lemon
  3. 1 clove garlic, grated
  4. Olive Oil
  5. 1 Tbl capers
  6. Black Pepper
  7. Kosher Salt
  8. 1 loaf rustic bread

How to make it

  1. Chop tomatoes in a very fine dice and place into a shallow bowl
  2. Mash about 1/2 the tomatoes
  3. Zest the lemon and add about 1 tsp zest and garlic to the tomatoes
  4. Mince the capers and add to the tomato mixture
  5. Add about 1/4-1/3 cup very good olive oil
  6. Season with salt and black pepper
  7. Taste to adjust blend
  8. Use a spoon to spread on bread slices
