This recipe is so ultra simple and quick that it is usually what I serve when I have guests and have to be occupied with other dishes for the meal. The lettuce can be prepared early in the day and refrigerated until needed.

2 heads butter lettuce, washed and torn
1 apple, pear, mango or 1 small basket berries
Handful broken pecan pieces (Optional)
1 cup olive oil
1/3 cup apple cider, champagne or white wine vinegar
1 small garlic clove mashed
1 tsp honey or brown sugar
salt and pepper to taste
  • Prepare the lettuce and cover or refrigerate until needed
  • Combine vinegar, garlic, honey, salt and pepper until well blended or sugar is dissolved
  • Slowly whisk in olive oil
  • Place dressing into a jar
  • Wash, dry (peel if necessary or desired) and dice the fruit
  • Add fruit and nut pieces to the lettuce
  • Shake dressing to blend and dress the salad lightly

    Diced celery can be added as well and you can use a bottled dressing to make this even faster.
