Company Salad

This recipe is so ultra simple and quick that it is usually what I serve when I have guests and have to be occupied with other dishes for the meal. The lettuce can be prepared early in the day and refrigerated until needed.

What you need

  1. 2 heads butter lettuce, washed and torn
  2. 1 apple, pear, mango or 1 small basket berries
  3. Handful broken pecan pieces (Optional)
  4. 1 cup olive oil
  5. 1/3 cup apple cider, champagne or white wine vinegar
  6. 1 small garlic clove mashed
  7. 1 tsp honey, brown sugar or other sweetener
  8. salt and pepper to taste

How to make it

  1. Prepare the lettuce and cover or refrigerate until needed
  2. Combine vinegar, garlic, honey, salt and pepper until well blended or sugar is dissolved
  3. Slowly whisk in olive oil
  4. Place dressing into a jar
  5. Wash, dry (peel if necessary or desired) and dice the fruit
  6. Add fruit and nut pieces to the lettuce
  7. Shake dressing to blend and dress the salad lightly

Diced celery can be added as well and you can use a bottled dressing to make this even faster.
