Easy Beans

1 lb. dry beans (2 cups) soaked overnight in lots of water
6-8 cups cold water - enough to cover by 1 inch
1 medium yellow onion (peeled, cut in half) or 1 1/2 tsp onion powder
1-2 bay leaves or 1/2 tsp ground bay leaves
1-2 tsp salt
Place all ingredients except salt into a large pot. Bring slowly to a boil. Cover and reduce heat to simmer. Check beans for tenderness after 1 hour, and again after 90 minutes. Add additional water if it becomes dry.
When they are tender, add the salt without stirring. Turn off heat and leave to stand 1 hour. Taste again and adjust salt. Drain beans, but do not rinse. Reserve some of the cooking liquid for use in final recipe.
