Easy Beans

What you need

  1. 1 lb. dry beans (2 cups) soaked overnight in lots of water
  2. 6-8 cups cold water - enough to cover by 1 inch
  3. 1 medium yellow onion (peeled, cut in half) or 1 1/2 tsp onion powder
  4. 1-2 bay leaves or 1/2 tsp ground bay leaves
  5. 1-2 tsp salt

How to make it

  1. Place all ingredients except salt into a large pot. Bring slowly to a boil.
  2. Cover and reduce heat to simmer.
  3. Check beans for tenderness after 1 hour, and again after 90 minutes. Add additional water if it becomes dry.
  4. When beans are tender, add the salt without stirring.
  5. Turn off heat and leave to stand 1 hour, then taste again and adjust salt.
  6. Drain beans, but don't rinse. Reserve some of the cooking liquid for use in final recipe.
