Fig Manchego Wraps with Fresh Figs

Quick - 30 minutes or less Total time for this recipe is 30 minutes or less.

Makes 16 appetizers.

4 large fresh black mission figs
1 wedge Spanish Manchego cheese
8 thin slices Spanish jamon or Prosciutto
  • Remove hard stem from top of figs and cut into quarters lengthwise
  • Remove rind from cheese and cut 16 wedges approximately 1/4 by 1/4 by 1 1/2 inches
  • Cut jamon or prosciutto in half across the middle - for pieces approximately 2 inches wide by 3 1/2 - 4 inches long.
  • Lay one of the prosciutto halves on a board and place 1 piece of cheese and one fig quarter about one inch from the bottom
  • Pull the bottom of the prosciutto over the fig/cheese and roll up to the top. Because the ham is cured it is slightly sticky and adheres without need of toothpicks.
  • Repeat with remaining ingredients.

    Serve with one or two other tapas dishes and a refreshing wine as a first course.
