Fig Manchego Wraps with Fresh Figs

Makes 16 appetizers.

What you need

  1. 4 large fresh black mission figs
  2. 1 wedge Spanish Manchego cheese
  3. 8 thin slices Spanish jamon, speck or prosciutto

How to make it

  1. Remove hard stem from top of figs and cut into quarters lengthwise
  2. Remove rind from cheese and cut 16 wedges approximately 1/4 by 1/4 by 1 1/2 inches
  3. Cut jamon or prosciutto in half across the middle - for pieces approximately 2 inches wide by 3 1/2 - 4 inches long.
  4. Lay one of the prosciutto halves on a board and place 1 piece of cheese and one fig quarter about one inch from the bottom
  5. Pull the bottom of the prosciutto over the fig/cheese and roll up to the top. Because the ham is cured it is slightly sticky and adheres without need of toothpicks.
  6. Repeat with remaining ingredients.

Serve with one or two other tapas dishes and a refreshing wine as a first course.
